H.I.T List--Beef Stroganoff

One pot beef Stroganoff that is! This is an awesome dish that I found years ago somewhere, in some magazine or place online, and we LOVE it! Since I endorse this recipe you must try because that means it is FAN-Tab-U-Liscious! :) And if that's not good enough...all my kids, even Bria, ate it! Sorry there are no pics of the food, but my camera was visiting a friend who needed it more than I did that day! :)

One Pot beef Stroganoff (don't want you to forget the name)

1 Tbsp. Ollive Oil
1 c. finely chopped onion
2 cloves Garlic
1/2 pound beef sirloin steak (I use stew meat if that is all I have), thinly sliced
2 Tbsp. Flour
1 can (14 1/2 oz.) beef broth
2 Tbsp. Dijon Mustard
2 tsp. paprika
1 med. green pepper, sliced ( I dice mine)
1 pkg. sliced mushrooms
2 c. egg noodles, uncooked
1 c. water
1/4 c. sour cream (I use a little more becuase I am a sour cream glutton) ;)

Heat oil in Lg. deep skillet or dutch oven. Add onion and garlic; cooko until browned, stirring frequently. Add flour, mix well.

Add beef broth, mustard & paprika; mix well. Stir in green peppers & mushrooms. Bring to boil.

Add noodles and water, stir gently. Reduce heat to med.-low, simmer 10 min. or til noodles are tender. Stir in sour cream, cook 1 min. or til heated.

NOTE: If you don't have canned beef broth, you can put 4 c. water in with 4 beef boullion cubes and still add the 1 c. water later. I also have found that if you happen to forget the flour when it says to put it in, you can still put it in after the boullions and water turn to broth and just stir really well.

It sounds fabulous, and I love that it's "one pot". : ) I can't wait to try it! Mushrooms are on sale this week at Publix and Kroger so I'll be making it soon.

Thanks for the new recipe! I'll have to leave out some things for my picky husband but it sounds awesome!
